Your List of Ingredients - Serves 4

  • 4x 4.8 oz. (135g) bone-in, skin-on chicken thighs

  • 8 shiitake mushrooms

  • 3 pt. (1.4ltr) water

  • 2 tbsp. rice wine vinegar

  • 4 slices ginger

  • 2 green onions, sliced, separate the white & green parts

  • 2 tsp. light soy sauce

  • ½ tsp. salt

  • ⅛ tsp. ground white pepper

  • ¼ tsp. sesame oil

  • 8 oz. (225g) rice noodles

  • 2 heads bok choy

Step 1: Craft the Broth Base

  • In a large pot, combine chicken thighs, shiitake mushrooms, and water. Bring to a boil, skimming off any foam.

Step 2: Infuse Authentic Chinese Flavors

  • Add rice wine vinegar, ginger, and the white part of the green onions.

  • Simmer on the lowest setting for around 30 minutes until the chicken achieves tender perfection.

Step 3: Prepare the Chicken

  • Once chicken is cooked, cool and shred into bite-sized pieces.

  • Discard ginger and green onions. Season the broth with light soy sauce, salt, white pepper, and sesame oil. Adjust to taste.

Step 4: Noodle and Bok Choy Harmony

  • In a separate pot, cook noodles according to package instructions. Add bok choy for the final 20-30 seconds to blanch quickly.

Step 5: Assembly and Savory Delight

  • Drain noodles and bok choy. Distribute evenly among 4 bowls.

  • Pour the prepared broth and mushrooms over noodles and bok choy. Crown each bowl with shredded chicken and the green part of the onions.

  • Serve promptly and relish the authentic flavors of Chinese comfort in every spoonful.
