4x 4.8 oz. (135g) bone-in, skin-on chicken thighs
8 shiitake mushrooms
3 pt. (1.4ltr) water
2 tbsp. rice wine vinegar
4 slices ginger
2 green onions, sliced, separate the white & green parts
2 tsp. light soy sauce
½ tsp. salt
⅛ tsp. ground white pepper
¼ tsp. sesame oil
8 oz. (225g) rice noodles
2 heads bok choy
Step 1: Craft the Broth Base
In a large pot, combine chicken thighs, shiitake mushrooms, and water. Bring to a boil, skimming off any foam.
Step 2: Infuse Authentic Chinese Flavors
Add rice wine vinegar, ginger, and the white part of the green onions.
Simmer on the lowest setting for around 30 minutes until the chicken achieves tender perfection.
Step 3: Prepare the Chicken
