Hazelnut Energy Balls Recipe

As November rolls in, there's nothing better than having a healthy, tasty snack ready to keep you energized throughout the day. These Hazelnut Energy Balls are perfect for busy schedules and can be enjoyed anytime you need a quick pick-me-up. Packed with natural sweetness from dates and the rich flavor of roasted hazelnuts, these energy balls are easy to make and perfect for prepping ahead. They're also a nutritious treat to keep on hand, whether at home or on the go.

Equipment You'll Need:

  • Baking sheet

  • Parchment paper

  • Food processor

  • Microwave or small saucepan

  • Mixing bowl

  • Plate for serving

Ingredients – Serves 8:

  • Energy Balls:

    • 4.8 oz (135g) hazelnuts

    • 1 oz (30g) 85% dark chocolate

    • 1 tbsp coconut oil

    • 8 medjool dates, pitted

    • 1 tsp vanilla extract

  • For Decoration:

    • 3 oz (85g) 85% dark chocolate, melted

    • 10 hazelnuts, chopped


Instructions:

  1. Preheat and Roast: Preheat your oven to 320°F (160°C). Line a baking sheet with parchment paper. Spread the hazelnuts on the sheet and roast them in the oven for about 10 minutes until fragrant. Set aside to cool for 5 minutes.

  2. Melt the Chocolate and Oil: In a small mixing bowl, combine the dark chocolate and coconut oil. Melt them together using a microwave or on the stovetop in a saucepan.

  3. Blend the Ingredients: In the bowl of a food processor, combine the roasted hazelnuts, pitted dates, vanilla extract, and melted chocolate/coconut oil mixture. Process for 2-3 minutes until the mixture forms a sticky dough. If it's too dry, add a teaspoon of almond milk or water.

  4. Chill and Roll: Place the dough in the refrigerator for 10 minutes. Then, roll it into 8 even-sized balls and place them on a plate lined with parchment paper.

  5. Decorate: Drizzle the energy balls with the melted chocolate and sprinkle with chopped hazelnuts for an extra crunch.

  6. Serve and Store: Enjoy immediately, or store in an airtight container in the refrigerator for up to 10 days.
