These savory and slightly sweet meatballs are a delightful combination of lean ground turkey, fresh rosemary, diced apple, and turkey bacon, all seasoned to perfection. This recipe makes 24 meatballs, serving 4 people, and is ideal for a hearty breakfast or brunch or even prep and freeze for a quick breakfast later. With just 15 minutes of prep and 20 minutes of cooking time, you can enjoy these delicious meatballs in no time. Let's get started on creating this mouthwatering breakfast delight!

Equipment You'll Need:

  1. Mixing Bowl: For combining all the meatball ingredients.

Ingredients - Serves 4 (24 meatballs)
  • 1 lb. (450g) lean ground turkey

  • 0.4 oz. (10g) fresh rosemary, finely chopped

  • 2.1 oz. (60g) apple, diced

  • 1 tbsp. avocado oil

  • 4 slices turkey bacon, cooked & chopped

  • 1.4 oz. (40g) onion, finely chopped

  • 1 tsp. sea salt

  • 1 tsp. black pepper

  • ½ tsp. garlic powder

  • ½ tsp. chili powder

  • ½ tsp. dried thyme

  • 2 tbsp. tamari

  • 1 egg


Instructions:

Step 1: Preheat the Oven

  • Preheat the oven to 400°F (200°C). Line a baking sheet with baking paper.

Step 2: Prepare the Meatball Mixture

  • In a large mixing bowl, add the ground turkey, fresh rosemary, diced apple, avocado oil, cooked and chopped turkey bacon, finely chopped onion, sea salt, black pepper, garlic powder, chili powder, dried thyme, tamari, and the egg. Mix until well combined.

Step 3: Form the Meatballs

  • Using your hands, form the mixture into 24 even-sized meatballs and place them on the prepared baking sheet.

Step 4: Bake the Meatballs

  • Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown.

Step 5: Serve and Enjoy
